How is it determined how many electrons are transferred in redox reactions?

For example, iron and tin(II) sulfate will react to produce iron(II) sulfate and tin:

Fe+SnSOX4FeSOX4+Sn

With the following half equations:

Fe+SOX4X2FeSOX4+2eX

and

SnX2++2eXSn

but where does the "2" come from? Why can't it be:

Fe+SOX4X5FeSOX4+5eX

and

SnX5++5eXSn
